Shredded Salsa Chicken Recipe

Salsa chicken makes a staple recipe that I turn to week in and week out! Made of just two ingredients, this simple salsa chicken recipe is great in so many dishes!

Serves: 4
Ingredients
  • 4-6 skinless, boneless chicken breasts
  • 2 cups salsa
Instructions
  1. Spray crock insert of slow cooker with nonstick cooking spray to prevent sticking. Add chicken to slow cooker and pour in salsa. Cook for 4 hours on low heat. Remove and shred chicken with two fork or place into stand mixer fitted with a paddle attachment and shred.
  2. Store unused salsa chicken in an airtight container for up to 5 days.

Baked Eggs in Ham

Ingredients

12 Eggs

12 thin slices of deli ham (round)

1/2 Cup of your favorite cheese (I used Parmesan)

1/2 Cup diced scallions

Directions

Preheat the oven to 400. Spray a muffin tin with cooking spray. Lay a piece of ham in each hole creating a little ham cup. Crack one egg into each hole and sprinkle with salt and pepper.

Bake the eggs for about 12 minutes until your desired consistency (I like when the white is firm and the yolk is still nice and runny)

Tuscan Garlic & Herb Whole Roasted Chicken Recipe








Ingredients
  • 1 Harvestland Purely All-Natural Whole
  • Chicken, giblets removed
  • 1 cup Schlotterbeck & Foss Garlic & Herb
  • Sauce
  • 3/4 tsp. Morton Table Salt
  • ¼ tsp. McCormick Ground Black Pepper
  • 20 cloves Spice World Garlic, peeled and
  • sliced (about 2 heads)
  • ½ Tropicana Lemon
Instructions
  1. Preheat oven to 350°. With fingers, carefully loosen skin around the chicken breast, leg and thigh. Using a basting brush, smear ½ cup of S&F Garlic & Herb sauce under the loosened skin. Place sliced garlic cloves under skin and in chicken cavity.
  2. Squeeze one lemon half into the cavity, then insert the squeezed rind into the cavity. Season with salt and pepper.
  3. Remove outer skin from whole garlic (leaving bulb intact). Slice top off and place inside cavity.
  4. Baste inside of cavity with ¼ cup of S&F Garlic & Herb Sauce.
  5. Close chicken openings with skewers. Tie the drumsticks together with kitchen string and place breast side up on a roasting pan rack. Baste skin with remaining ¼ cup of S&F Garlic & Herb sauce, coating evenly.
  6. Bake, uncovered, for 20 min/lb. or until a meat thermometer in the thickest portion of the breast registers 165°. (Tent with foil if skin has browned before chicken is done.)
  7. Remove to warm platter; rest 15 min. before carving. Serve immediately with easy Garlic & Herb Roasted Potatoes made with S&F Roasted Garlic & Herb sauce.
